Bagelshop’s New Year, All Year series continues with a collaboration with Colby Rasavong of Bad Idea, in celebration of Pi Mai. Pi Mai, the Lao New Year, marks a fresh start, celebrating renewal, community, and joy. For this special collab, they’re serving up something bold and unforgettable: the Jeow Bong and Fried Bologna Bagel—available exclusively at Bagelshop April 14-16. It’s served on an onion bagel with a crispy panko-crusted, thick-cut, homemade bologna, a fried egg, and jeow cream cheese–a blend of dried chilis, tamarind, fried shallots, fried garlic, brown sugar, and fish sauce–bringing the ultimate sweet, spicy, and savory punch.
Inspired by the big and bold flavors of Laos, Chef Rasavong highlights jeow bong, a staple that showcases resourcefulness of the Lao people as every part of an animal or vegetable is used to reduce waste while crafting something new and delicious—an ethos that guides his cooking to this day.
A portion of the proceeds will be donated to The Nashville Food Project.
